interTrackFoam is part of the development extended version of OpenFOAM and is not part of the standard release from OpenCFD. The interTrackFoam solver solves a partial differential equation to predict vertex motion in one or two-phase flow. The advantage of this approach over interface capturing methods is that the interface can remain sharp and numerical smearing is avoided.

The most complete documentation of how to set up an interTrackFoam case is Anders Rynell's report for the Chalmers' PhD CFD course 2010.
